Walking Taco Casserole

I love walking tacos and usually get them at every festival or fair we go to.  Again, I found this recipe on Pinterest.  It was fairly easy to make and very delicious.

Walking Taco Casserole

1 1/2 lb ground beef
1 pkg taco seasoning mix
Fritos
Shredded Cheddar cheese

Brown 1 1/2 lbs ground beef. Mix in taco seasoning and cook according to directions on package. 




Layer in a casserole dish in the following order: Fritos chips, meat mixture, shredded cheese. Repeat layers once again.






 Bake at 350° for about 15-20 min or until cheese is bubbly.






After removing from oven I added more cheese on the top.

I really liked this and so did Marley until she got up from the table and Zeus ate it.  The only downside is when you reheat it the next day the chips are all soggy. Maybe next time I'll do a half size so that way I don't have soggy chips.

  1. Actually the chips are already soggy right after you bake it. I use salt-free tortilla chips, as Fritos are way too salty, especially when combined with taco seasoning and cheese.

    1. Good idea. Thanks for the tip! I don't know that I've ever seen salt free ones, but I will look for next time. My top layer of chips were crunchy after I baked it, but when I reheated it they turned soggy.

    2. Yes, the chips ARE already soggy after you bake them. I also agree that Fritos are WAY too salty, and I use salt-free tortilla chips, as well.

    4. This sounds more like a naked taco lol There's no toppings on it. I always thought a walking taco was made in a snack size Dorito (what ever your favorite chip is) chip bag. You use the chips to scoop the goodies.

  3. A walking taco in SD uses Dorito chips... So when I make this, I will try it with Dorito's. Did you use toppings at all?

  7. I make walking tacos adding the meat mixture to a small (single-serving) crunched up bag of doritos or fritos. Slit the bag on the side, add a scoop of the meat mixture, some sour cream, salsa, tomatoes, lettuce, or anything else you might add to a taco. Grab a fork, and you can truly 'walk around' with your taco. Not sure why this recipe is called a walking taco.

    1. I didn't create it, but I imagine it's called walking taco because it's all the same ingredients as a "walking taco" but in a casserole dish instead of a bag. They do taste better in a fritos bag at a local festival though.

  13. This was delicious. My family loved it. We added lettuce, tomatoes and sour cream as side items for them to choose to top it off. It was awesome.

  17. Very good! I added vegetarian re-fried beans and corn to the layers. Sided with lettuce, tomatoes, sour cream, and taco sauce! Also used multi-grain Tostitos instead of the corn chips....delicious!! Thanks for the share : )

  19. Spread refried beans on a burrito shell, then this casserole, followed by sour cream and banana peppers. Walking Taco Burrito!!!!

  20. I live in Santa Fe, New Mexico and we call these Frito Pies. We make them with fresh pinto beans made in a crock pot.
    For single servings, you put fritos on the bottom of your bowl, then ladle the beans and a little bit of the bean juice on top of the fritos, top with homemade red chili that is made with ground beef (NO CUMIN), and top with shredded cheese, diced onions and tomatoes, shredded lettuce, and sour cream.
    They are always sold at local High School football and basketball games in single serving Frito Lay bags and are super delish and never more than $4/each.
    One of the best Spanish, not mexican, meals ever :)

I make a taco casserole that calls for quarter a bag of crushed doritos on the bottom of a 9x13 pan 3lbs of ground beef cooked and then add 3 pkgs of taco seasoning and cook as directed then add 2 cans of cream of chicken soup to meat and 16 ounces of your choice of cheese heat all on sove and pour over doritos and then add rest of bag on on top and bake coverd 20 min at 350 deg. then uncover 10 min. You can add toppings on top as you serve if you like....Yummy!!!!

  22. I made this for my family today and it was a super hit, my picky eater ate three servings, I did top it with lettuce, onion, sour cream and taco sauce but that is the way we like it, will definitely be making it again.

  24. Made it for dinner tonight and they all loved it! Mine was NOT SOGGY at all! I just drained the hamburger before putting it on and even after sitting there for a bit, it never got soggy! Kids ate it plain, hubby added taco sauce, and I added lettuce and sour cream and taco sauce. Yum! Thanks!

  26. Delicious. I made it just as your recipe states. It wasn't AT ALL soggy. In fact, nice and crunchy! I used good ground beef so there was very little grease. Not too salty either. Loved it!!!

  27. I tried this the other night and I went by the directions and it was very very very dry. My kids or I could not eat it....any other suggestions on maybe adding something to it???

    1. Others have added sour cream or taco sauce. maybe add a little more water to your taco meat so it's more watery and not dry.

  29. We use to make these..but in snack size frito bags...just open bag put a scoop of meat then cheese lettuce etc what u wanted on it.. Hints the name walking frito pie..you could walk around with it at fair picnic park etc.. No baking.. Chips were crunchy.

  30. Walking tacos in with come in little frito bags..super cool on the go! And no baking! Just put it all in and fold the top...cheese will melt.

  31. My Husband an I just brown lean hamburger meat,add seasoning. Then on a plate or in a bowl we put fritos, meat, lettuce, sourcream, shreded cheese, and tomoatoes on it and eat it like a taco salad! The kids love it too!

  32. I do this with a layer of Vigo brand Black Beans & Rice (Cuban seasonings), sans the chips AND the trip to the oven! Then I eat it as a dip with blue corn tortilla chips...easily re-heatable and versatile if you feel like having some sour cream, guacamole, and/or salsa as a top layer. Easy to add lettuce, cabbage or tomatoes too. Trust me on this one...you'll be making the full 9" x 13" batches every time! Just as good with ground turkey for those watching their calories or fat intake. :D Going Anon for lack of choices. (FB is my preferred method of communication & where I saw your recipe).

  36. Since I have Frito's I will use those to make this tonight but I can see my family preferring it with Doritos as my husband and kiddos are HUGE Doritos fans. I am thinking of adding some of my wonderful homemade re-fried beans to add some bulk and stretch out the ground beef so I can make it with one pound instead of 1.5 pounds :) Thanks for the inspiration and the recipe and I can't wait to whip it all together tonight.

  37. Delicious if you use Nacho Cheese Doritos and a "Nacho Cheese" or "Three Cheese" shredded cheese mixture (can be bought at pretty much any grocery store) :)

  39. I made this last week and I can't get enough...... I do make it with tortilla chips they got a little soggy not too bad.... but when I made it today I ground up the chips smaller and much cruncher..... thanks for this great food LOVE it
